Almond Snaps

These Almond Snaps have considerably less sugar and fats compared to most cookies. The end result is a paper thin and crispy treat, with the fragrance of almonds in every bite. Warning: These almond snaps are highly addictive. Even though it’s a healthier snack, do practice restrain, otherwise you might empty the whole tub in no time. The ingredients and procedures are simple and they are truly a snap to make.

40g unsalted butter
45g icing sugar
1 egg
1 egg white
35g plain flour
15g cornflour
50g almond flakes

1. Sieve the plain flour and cornflour and set aside.
2. In a small pot, melt butter and icing sugar over low heat. Stir the mixture until icing is completely dissolved. Set aside to cool.
3. Add in the egg and egg white and whisk till combined.
4. Add the sifted flour into the above mixture and whisk until combined.
5. Chill the batter for about 15 minutes.
6. Spread a spoonful of batter on a greased baking tray or on a silicone mat and form a paper-thin and even circle. Sprinkle almond flakes on top. Repeat with remaining batter. Leave about 1 inch between each circle of batter.
7. Bake in pre-heated oven at 170 Degrees Celsius for about 10-15 minutes or until golden brown.
8. Remove almond snaps from the tray immediately and cool on wire rack. When completely cooled, store in air tight containers.
