Home-made soy milk

Soy milk is rich in proteins and can even lower cholesterol levels as it contains isoflavones. However store bought soy milk usually contains a lot of sugar and may also contain preservatives and artificial flavourings. Homemade soy milk is not only easy to prepare but also ensures that you get the best out of the soy beans. You can choose to add either cane sugar or rock sugar to sweeten the drink. For diabetics, enjoy it in its pure form (sugar-free) or add some artificial sugar. Soy milk is a good source of protein for vegetarians and those who are lactose intolerant. Soy milk can also be used to replace milk in most baking recipes, in muffins, cakes, and even ice cream!

80g dried soy beans
600ml water
sugar to taste

1. Wash and soak the soy beans in water overnight.
2. Drain the water. Put the soy beans and the 600ml of water into a blender and blend at high speed for about 30 seconds.
3. Pour the blended soy into a pot and simmer using very low heat for about 10 minutes. Add sugar towards the end of the cooking. Do not let it burn.
4. Pass the soy milk through a very fine sieve, muslin cloth or cheese cloth.
